Luckily we have a reasonably priced source from an Amish farmer.  We love the rich silky texture, and sweet full taste.  Raw milk must come from cows on pasture to be safe.  Our milk keeps about 12 days then sours beautifully,  We always have some sour milk and cream for baking and sauces, and I frequently make yogurt.   I also save the whey from sour milk for pickling,  dressings,  beverages, etc per Weston Price guidelines.
My Dad often comes down with stomach &quot;bugs&quot; when he takes a long visit with my sister who is devoted to a low fat, almost vegetarian diet.   Someone is always sick at her house, yet she believes that they are &quot;eating healthy.&quot;    At my house we are never sick, and I teach in elementary schools where I am exposed to lots of virus&#039;s etc.. As more people want to drink raw milk, there will be more cases of brucella, possibly not being recognized as such. Certainly, if one wants to drink milk, it should be as nutritious as possible, therefore should be raw. Let the Federal and State government closely regulate these testers instead of themselves inspecting food production establishments. As we know - current inspections are inadequate. But a science-based, well regulated industry of safety testing might be able to fill in the gaps. Then - remove all the regulations forbidding farmers and dairies from selling to consumers and local markets. Let the buyer inspect the safety certificates and buy with the assurance that the product is safe. If the producer is regularly monitored, then the producer has strong incentive to apply cleanliness and sanitation measures at all stages of production, thus ensuring safer products. Let them sell to individuals and/or local markets. The buyer would have the opportunity to check the safety certifications and buy with confidence. It is NOT rocket science to produce clean and safe farm and dairy products. Prices to the consumer might vary quite a bit - and reflect more accurately the extra care required to ensure a healthy product. We would keep more small family farmers in business and create a demand for locally produced products. In turn, this would reduce wasteful (in terms of oil) long distance transportation of food and counter-productive subsidies to crops such as corn. Everyone knows that raw food period is healthier.  Milk heated to very high tempertures is so depleted of any health benefits that it seems criminal to tamper with natures bounty.  I question the intentions of the FDA.  Is it economy or ecology they are supporting?
